The ‘A’ grade certificate and types of food premises
Food premises are categorised according to risk for registration purposes. Currently there are five categories of risk that apply to food premises in the City.
Class One certificate covers:
- Retailers who provide fruit/vegetables
- Low risk pre-packaged items
Class Two certificate covers:
- Dairies
- Service stations
- Medium sized clubs who supply ready-made foods e.g. pre-wrapped pies
- Low risk food
Class Three certificate covers:
- Large clubs/service stations
- Rest homes (<25)
- Minimarts
- Small canteens
- Medium risk food
Class Four certificate covers:
- Takeaways
- Eating houses (<40)
- Meat and fish retailers
- Delicatessens
- Large canteens
- Small caterers and wholesalers
- Bakeries
- Rest homes (25-50)
- Medium supermarkets
- Supply of high risk food
Class Five certificate covers
- Eating houses (>40)
- Large caterers
- Supermarkets and wholesalers
- Rest homes (>50)
- Supply of high risk food
Other types of food premise
- Travelling shops
- Food stalls
- Clubs
- Cafeterias (small) with no food preparation
- Old peoples' homes
Things to consider before you apply
To obtain an ‘A Grade’ Certificate of Hygiene for the food premises, you will need to meet the provisions of the Food Hygiene Regulations 1974 and the following qualifying criteria:
- Your staff maintain the highest standard of personal hygiene
- Your food is prepared, stored and served to the highest standard
- Your manager and at least one other staff member have undertaken a food safety training course
- Cleaning and maintenance schedules are maintained by management
